One of the biggest on-going struggles I have every single day, is "what's for dinner?" or, "what's for supper?", depending on where you live!!
Sometimes I can go for a whole week and come up with something yummy and healthy every night of the week. And I can plan it so the leftovers are excellent........ Other times, I can NOT think of what to make and completely run out of ideas.
And for all you people out there that are about to post a comment about how you plan your meals on Sunday for a whole week and go buy the groceries right away.......... DON'T BOTHER!! You people have way too much time on your hands!!!

Today, I threw a sirloin tip roast in the oven before I left for work. (That's red meat, for those of you that live on pizza pops). Generally, I throw in the roast, some onions, potatoes, carrots, a few seasonings and I set the oven for 3:00 or so and voila - I get home from work and dinner's ready!
However, today I'm living on the edge!! I breaking up that combination and I'm going to have MASHED potatoes instead. And maybe peas instead of the carrots. It got me to thinking about how I always combine the same foods together.
If it's pork chops: mashed potatoes and cream corn
If it's roast chicken: mashed "garlic" potatoes and kernel corn (or peas)
If it's fish: rice
If it's pork roast: roasted potatoes and peas or beans
If it's steak: baked potatoes - and screw the vegies!!
If it's hamburger patties in gravy: mashed potatoes and whatever vegie looks good.
Today, I'm actually doing something different and I'm going to cook the potatoes when I get home and mash them. Roast beef, mashed potatoes, gravy, and what kind of vegies............???????????
